Ingredients :
1 cup all-purpose flour
1 eggs
¼ tsp salt
1 cup grated zucchini
¾ tsp baking soda
1/3 vegetable oil
½ cup cocoa powder
¼ cup applesauce
¾ cup Xylitol
¼ cup chopped nuts
1 tsp vanilla

 
 

Directions:
Preheat Oven to 350 degrees. Grease a mini muffin pan. (Or 2 small mini muffin pans) In a large mixing bowl, sift together flour, salt, soda, cocoa and Xylitol. Combine egg, zucchini, oil , applesauce and vanilla; blend into dry ingredients. Stir in walnuts. Bake for 10-12 minutes in preheated oven. Cool in the pan
